Our Journey
In 1984 Chris and Rich Meyer moved their lives to St. John from New Jersey, they were in love with the breathtaking beauty, bountiful culture, and incredible people. Chris bought the Lime Inn with backing from her bosses in the states and soon was operating a hot plate and microwave out of the makeshift kitchen. Business grew quickly as more visitors found out about the magical gem that is St. John and within several months Rich was needed to help operate the business. The dynamic duo of talented chef, Chris, and man on the ground and host with the most, Rich, was born. Wednesday Night shrimp nights became a mainstay. In the coming years they would welcome two girls, Chelsea and Kasey, and continue to hustle at the restaurant. Rich built roofs over the once open air courtyard, added a deck, built out the kitchen, and built the Ficus Bar (famous for the ficus tree affixed in the middle). Local Virgin Islanders, celebrities from around the globe (including Al Gore and Neil Young), as well as thousands of loyal visitors, followed by their children and grand-children, generations of St. John - lovers, enjoyed meals with them. The times continued to change but the work ethic, hospitality, and house made delightful recipes continued for 30 years. In 2015, as Rich and Chris welcomed their first grandchild, they headed towards retirement from the daily responsibilities of the restaurant. Daughter, Chelsea and son in law, Richard, stepped in to run the day to day.
In 2017 Chef Amaro joined the team from Puerto Rico as the new head chef, bringing with him his own talent and recipe repertoire. After the storms in 2017 Lime Inn was one of the first restaurants open. It was a memorable and wild couple months, a harrowing experience for many, but still managed to feel like the rebirth of a community. 2019 brought the opening of Lime Out, our floating taco boat, a project with childhood friends Valerie and Dane Tarr, Dylan Buchalter, and an overnight success. Lime Inn became the base kitchen for Lime Out as well as moved into the realm of fine dining. 2020 brought more unexpected changes and with the regulations surrounding dining and the incredible influx of tourists, we adjusted to a tasting menu, adorned with Chef Amaro's favorites.
2023 is another transitionary year, and an exciting one at that. We are going back to our more casual roots and gracing Cruz Bay with our famous tacos, and some other delicious treats. We can't wait to share our space with you once again!
